What's the best name for the cuisine that includes: avocado toast, salads, smoothies, acai bowls, X but with brown rice, X but made vegan... ? I've been calling it "hipster food" but I wonder if there's a more widespread standard term for it.

“healthy”, “brunch” and “juice” are usually winners when looking for this type of food on delivery apps

Degen Dish. It has all the ingredients for big brain 🧠 people. And to top it off you can add Degen protein plant base and call it Degen Ultra
This is largely my partner’s diet, and I do call her a hipster because it annoys her, so hipster food checks out. If these don’t have meat, I’d blanket these under ‘plant-based’. If they have meat/fish, perhaps ‘American healthy’ or ‘wellness food’.

Hipster cuisine is pretty accurate 😅 except hipsters dont like to hear that! Bunch of traditional foods (containing meat & fat) are damn healthy/clean too!
It sounds like vegan unless the smoothies have diary in them or the salads have cheese/eggs, etc. Regardless, such a diet is much healthier than what many Californians eat.
Its colloquially known as Genties pruhnounced (Jencheese) like after  gentrification. No hate only avocados.

bio ..hipster works well, because majority are a show off; the few bio restorants that have a real chef would allow to discover exotic combinations you'd rarely get an occasion to enjoy kind of like crypto projects, a few really use it well in their product, most are a show off

I notice that the foods mentioned here are minimally cooked, are prepared really by assembly and require little knowledge of traditional cooking techniques. Perhaps then easier to prepare for those with little kitchen/ cooking skills?

It's the cuisine that people here in Hawaii who are into surfing and/or yoga seem to all favor - so I would call it a fusion of the two words. SurYo Cuisine. or maybe GaSu which is pretty funny because vegans do tend to fart a lot.
