OK does anyone have any idea why conventional "breakfast" food seems to so often come with absolutely no vegetables?
most Indian breakfast items usually come with a lentil stew of sorts No vegetable dishes is mostly the west's concept of breakfast
in the middle east breakfast usually has lots of veggies and salads
Both Asia and the West seem to do so 🤔 . I guess vegetables are best consumed fresh and there's often no time to buy them in the morning. Additionally, people prioritize carb and protein intake at breakfast.
Maybe these days due to genetic modifications they have enhanced varieties and texture of veggies, but here in India we already are vegetarians so can't relate to it.

My guess is that it’s because traditional breakfasts emphasized high-energy foods since historically our access to fresh veggies was limited That + Kellog’s growth/marketing divisions lol

In Israel default breakfast will always include some vegetables I guess a matter of cost? (vegetables are grown locally here all year long, whereas in places like Europe or the US it can get extremely cold and vegetables are more seasonal or imported based)

Maybe historically breakfast was mainly about getting in quick calories to kickstart the metabolism for the work day? Maybe veggies weren’t quick enough to prepare (need to boil) and slowed down carb absorption for quick energy.
South Americans will eat an avocado and a tomato for breakfast, maybe with a banana and some coffee.
It's just a matter of programming your brain. I'm traveling in China at the moment and just this morning I tried the local breakfast at the hotel, centenarian eggs, stew and Dim sum. It was perfect (although I must admit I did have some coffee, no kidding).
For English - it used to be a working man’s meal before going into arduous labor. Usual vegetable options were carrots or parsnip (which is carrot + radish) which did not carry enough calories. I also assume vegetables tasted a lot more bitter before modern era.

This is western/anglo-saxon breakfast you're thinking of. Southern Europe, Middle East, Asia is another story.
What do you mean by 'conventional'? Each country has its own cuisine and breakfast culture. I doubt nobody around the world eats vegetables in the morning.
Migas (my go to) usually include tomatoes, onions, green pepper and side of beans.

My go-to breakfast for a while: Coconut milk yoghurt Raw cacao powder Chia seeds Acacia honey Sunflower seeds Acai berries Though the hotel I’ve been staying at this week in Cyprus hasn’t got any of it and I refuse to eat the typical pancakes, syrup and bacon lol. Watermelon and halloumi it is!

Not conventional, but breakfast cultures that were also aligned with the last Industrial Revolution; the breakfast optimization question to get out the door at 7am made veggies skip the brekkie table. A full English brekkie comes with a lot of fat, back in the old days, this is what farmers used to eat and run on until late evening Fat is a great resource of energy. So, boils down to needs during the industrial revolution (aka high energy meal that lasts for a long time) and also locally sources produce.
Vegetables are better digested at noon when the Sun is at peak hour as it directly mirrors our digestive fires 🔥 that is why ideally breakfast foods should be light and easily digested in the morning hours as the fires build up. Historically I’d guess prep time. Grab a bite of easily prepared carbs and protein and go. Properly veg heavy foods also take longer to eat and are bad for a rush. I make egg or tofu veg skillets sometimes and it takes 2x longer to make and 2x longer to eat that plain eggs. So only for lazy mornings.
