Attack on Titan & Jujutsu Kaisen are top tier for me Kill la Kill, HunterXHunter, Promare (film), Gurren Lagann, Cowboy Bebop
If you want to jump back in with something short, fun, and easy to watch I recommend Great Pretender, The Millionaire Detective Balance: Unlimited, and Uncle From Another World.
