Depends on need and pen/pencil. I use a Pilot G2, Rotring/Zebra mechanicals for sketching, or fountain. Leuchtturm, Moleskine, Mnemosyne (my choice) cover most use cases. Action Method for planning. Field notes for everyday carry, though not fountain-friendly. UI Stencils products for product work.

I use fountain pens a lot so Japanese paper has been most consistent and ink friendly. Maruman Mnemosyne notepads (no spiral). Rhodia (French) is a good alternative. Leuchtturm1917 is my backup.
