Commerce should have everything you need for that. After you calculate the price for the basket of cookies they choose, you can generate a payment link (via api) and display it for checkout or send it via email if you prefer. That will allow the user to pay with any erc20 and will settle in USDC to you

we want to accept the shipping address data, but it might not be available as the only API is a charge minus the other details. is that correct?
