For grilled cheese, I used shredded mozzarella, pecorino, and parmesan. Dipped in tomato soup so that the saltiness balanced out. Costco sells great pecorino slices btw. Recommend.
Tomato soup + grilled cheese last night Tomato soup: 1. Chop tomatoes, onions, japapenos, and red bell peppers. Chop off top of garlic bulb. Add all, salt, pepper, and olive oil. Roast in oven. 2. Stir fry diced onions + chopped mushrooms, radish and carrots. Add in roast veggies + beef stock. 3. Emulsify

I made one yesterday with beef broth, onions, garlic, ginger, radish, mushrooms, green onions, and a little bit of soy sauce and salt. Let it cook for a while until I liked the taste :)
My favorite soup ingredient that I’ve discovered this year is radish. I use them in nearly all of my soups now. I personally prefer Asian radishes (usually Japanese or Korean) over other varieties, but any will do! Adds a unique flavor that I can’t go without now :)

1. Toast the spices (also toss in a dried hot pepper if available) 2. Add olive oil and throw in onion, green onion (white part only), ginger, and garlic 3. Add celery 4. Add bell peppers 5. Add enoki mushrooms 6. Add chicken stock and cover. If you don’t want it spicy, remove the hot pepper before adding the stock

Cabbage is great, both raw and cooked. When raw, I typically cut or shred it into thin slices. I add shredded lettuce to salads and sandwiches. For cooking, I like to cut cabbage leaves in half or quarters and add them to slow-cooked stews or soup based. Makes it feel v homey.
