other great times to ski without crowds are last 3 weeks of Jan and first two weeks of Feb, though don't go to Park City during Sundance--last week of Jan usually--unless you are there for the films another awesome option many don't know about is Alta or Solitude early April
cool - in this case, i would prob not go to Vail. it's not very beginner friendly can you avoid holidays/weekends? early season may be great to save money and skip crowds since as a beginner it doesn't matter if upper/steeper runs have coverage yet Beaver Creek is nice-tree lighting and fireworks Thanksgiving i think

are you going alone? with friends? family? kids? what terrain do you like to ski? when you want to go key to deciding Vail and Park City can get very crowded holidays and weekends. Aspen is further away and tends not to get day trippers. all three have great towns, food and ambience. have you considered Telluride?
